Obtained from corn, it can be used as a thickening agent for sauces or creams for cakes (it has twice the thickening power of corn flour). Starch in general is of particular importance for human nutrition, being the main component of flour, bread, pasta and other food preparations. It constitutes one of the most important energy resources of the human body. It is, in fact, a compound carbohydrate (consisting of two polysaccharides, amylose and amylopectin) and we find it in different parts of plants, from seeds to fruits or tubers.
