The Cabernet Sauvignon grapes, picked and sorted by hand, were crushed, and the must was extracted after a few hours, in order not to allow its prolonged contact with the skin of the berries, thus limiting the color extraction to the desired level. The process continued with a drastic debarking at low temperatures and with a fermentation at a controlled temperature of 12-14 degrees, to preserve the primary aromas and to allow the development of secondary aromas that clothed the wine in an aromatic robe distinct from that of a red wine from the same variety.
Olfactory notes: Fruity aromas, with notes of blueberries, strawberries and red currants.
Tasting notes: Notes of red fruits, a fresh and round wine on the attack, with good acidity and a long aftertaste.
