Description
Carrots are an excellent source of vitamin A, providing 210% of an adult's daily needs. They also provide 6% of the vitamin C requirement, 2% of the calcium requirement and 2% of the iron requirement per serving.
The antioxidant beta-carotene gives the carrot its orange color. It is absorbed in the intestine and converted into vitamin A during digestion.
Carrots contain fiber, vitamin K, potassium, folic acid, manganese, phosphorus, magnesium, vitamin E and zinc.
