Leeks contain 87-90% water, carbohydrates, proteins, carbohydrates, lipids, glucose, fructose, sucrose, fats, minerals (potassium, calcium, phosphorus, chlorine, magnesium, iron, manganese, zinc, sodium), dietary fiber , polyphenols, volatile oil, saponins and vitamins A, B, C, E, K, PP, B6. It also contains an important level of nitrogen which makes it a good builder and regenerator. From Hippocrates to the present day, therapists have discovered other and more therapeutic properties of the popular vegetable, which has become a suitable remedy for 60 acute and chronic diseases. Moreover, in gastronomy, leeks are elevated to the rank of king of soups.
