Livia, a resounding name that gathers the power of the most famous Romanian gin that has lasted throughout the long Latin tradition. Under such a special character that recognizes true values, the wines of the LIVIA range are an exceptional pleasure for those looking for uniqueness and refinement.

Plavaie is an autochthonous variety cultivated for hundreds of years in Moldova. Dry white wine of a greenish color with discreet aromas of linden flowers and apple. The taste is reminiscent of ripe greens and the high acidity gives sensations of white pepper and spices on a vegetable background. Medium body with a fresh and refreshing aftertaste with unmistakable mineral notes.

The grapes are harvested at night, de-stemmed and gently pressed with Willmes, the must being later naturally de-stemmed. The pressing process is imperative at this stage to preserve the fruity character. The must is then subjected to the fermentation process under the action of selected yeasts, in temperature-controlled stainless steel tanks. At this point, the wine rests on a fine lees until January to add complexity and structure. Clarification is done naturally and bottling in a perfectly sterile environment.

Scent: a perfume of a mild variety, with aromas of linden flowers and apple.
Taste: the taste is reminiscent of ripe apricots and the high acidity tickles the taste buds like cracked peppercorns, accompanied by other spices, ending with a vegetal, slightly pungent note.
Food pairing: a refreshing aperitif or a good choice at meals with fish, seafood and pasta with white sauce.
