The grapes are automatically harvested at full maturity and gently destemmed. Fermentation takes place in special tanks that allow the must to be beaten to extract pigments and tannins. Under the influence of the selected yeasts, the wine first undergoes a slow alcoholic fermentation followed by malolactic fermentation. The wine rests for several months, during which it enriches its aromas and structure. Filtration and bottling.
