The grapes come from a single vineyard, the Stelus hill. It is a blend of wine barricaded for 24 months in the proportion of 85% and fresh wine from the harvest year, in the proportion of 15%. Thus, we obtain a unique mixture of fresh fruit aromas (cherries) and aging aromas, ripe cherries, rotten cherries or sour cherries. The wood of the barrels gives the wine the aroma of vanilla and chocolate. The wine is unfiltered and lends itself very well to aging in the bottle. It is recommended to decant and aerate the wine before consumption.

Appearance: inky, with ruby ​​reflections.
Smell: created for a small collection or a wine shop, emeritus heralds the qualities of a top quality wine through the notes of wood and the aromas of red fruits, more precisely open and macerated gooseberries.
Taste: fruity notes intertwine with notes of vanilla and chocolate. the prolonged astringency is also provided by the rustic tannins, perceived as such due to the unfiltered texture of the wine.
culinary association: recommended for dishes with smoked meat, grilled fish (tuna, salmon, swordfish) and snacks with aged cheeses (cheddar, gouda).
Serving temperature: 16 - 18°C. (Decanting for 30 minutes is recommended. Bottle aging potential of up to 10 years).
